No pancakes or waffles (unless it’s made from flours like almond or coconut).
What can I eat?
My favorite breakfast is eggs scrambled with vegetables or an omelette
Ezekiel Bread - you can find this in most super markets. Wal-Mart sells it. French toast is a good option to make with Ezekiel bread. My wife does this on a regular.
Homemade breads made from almond or coconut flour
Any Vegetable and fruit
Any Healthy Fats: coconut milk, nuts, etc...
Why shouldn’t I eat grains?
I am going to simplify this.
Besides all the carbohydrates and lack of nutrients in grains here are three other reasons why we should avoid them as much as possible.
Lectins bind to insulin receptors and attack the stomach lining. Lectins also cause leptin resistance. Leptin, "the hormone of energy expenditure", helps to regulate energy balance by inhibiting hunger.
Gluten causes systemic inflammation and a leaky gut. Gluten causes the following Intestinal (diarrhea, gas, bloating, pain) and extra-intestinal (confusion, fatigue, cognitive decline).
Phytates make minerals bio-unavailable.
If you want a more detailed answer about grains Mark devoted an entire article to this.
